The Future Food Joint Laboratory carried out a seminar on “Theory and Application of Sodium Alginate”
On the afternoon of March 24, 2022, the Future Food Joint Laboratory held a seminar with the theme of “Theory and Application of Sodium Alginate”. A total of 51 members from the Shanghai Jiaotong University project team and the BLG project team, including R&D, General Engineering Office, and Marketing Department, participated in the seminar. Although offline activities were limited due to the impact of the epidemic, the project team conducted an online seminar through the Tencent conference.
First, Professor Fang from Shanghai Jiaotong University made an academic elaboration on the theory and application of sodium alginate, explained the properties and gel principle of sodium alginate, and explained the use of sodium alginate in food, medicine and other fields through practical cases. Various applications in the chemical industry. After Professor Fang’s explanation, everyone actively spoke and put forward their own ideas and questions, and discussed and discussed the possible application fields and directions of sodium alginate in the future, and also determined some work that needs to be followed up after the seminar. The Future Food Joint Laboratory project team will carry out discussions and training activities on hydrocolloid-related topics every month, and will also conduct further research and exploration on the technology and application of hydrocolloids through project cooperation.
