Konjac Boba in Muffin
Ingredients
Muffin Batter
- 219g Plain Flour
- 4.8g Baking Powder
- 4.8g Baking Soda
- 2g Cinnamon Powder
- 3.5g Salt
- 113g Unsalted Butter
- 100g Brown Sugar
- 50g White Sugar
- 110g (2) Eggs
- 120g Yoghurt
- 8g Vanilla Extract
- 60g Milk
- 15g Boba Konjac
Crumble
- 67g Brown Sugar
- 15g White Sugar
- 1.6g Cinnamon
- 56g Unsalted butter, melted
- 84g Plain Flour
Preparation of the recipes

Beat unsalted butter, brown sugar, and white sugar together until light and fluffy.

Add eggs, yoghurt, vanilla extract, mix well.

Add in all dry ingredients.

Fold in BR-03 Konjac Boba.

Pour into lined muffin tin until ¾ full.

Spread crumble over muffin batter surface.

Bake at 180 degrees for 18-22 minutes or until toothpick come out clean.

Mix all dry ingredients together.

Stir in melted butter until small chunks formed.

Tips
1. Do not overmix crumble.
2. Bake muffin at 200 degrees for 2-3 minutes for browner and crispier top.
