Ingredients

Thick Toast

  • 125g Bread Flour
  • 60g Fresh Milk
  • 34g Egg
  • 15g Sugar
  • 12g Unsalted Butter
  • 0.5g Salt
  • 1.5g Yeast

Toppings

Thai Milk Tea Spread

  • 25g Cream Cheese
  • 2.5g Icing Sugar
  • 5g Fresh Milk
  • 1g Gelatin Sheet
  • 10g Whipping Cream
  • 1 Thai Milk Tea Sachet

Preparation of the recipes

    Thick Toast

    Add bread flour, sugar, salt, and yeast into a bowl. Mix well. Start on low speed with dough attachment in a standing mixer.

    Add egg & milk. Change to medium speed until all ingredients are well mixed together. Add butter

    Change to high speed and knead until smooth and elastic for about 5-7 mins. The dough should be stretchy.

    Transfer dough into a bowl and cover with cling wrap. Let the dough rise at room temperature or 25-28°C until doubled the size.

    Portion the dough into 2-3, deflate the dough, and flatten it into a rectangular shape. Roll into a log.

    Repeat with the remaining dough. Place into the bread mold.

    Place the loaves on a baking sheet. Let the loaves rise for 30-45 mins or until nicely puffy.

    Preheat oven: top heat 160°C bottom heat 180°C.

    Bake the loaves for 20-25 mins, depending on size. Let the loaves cool completely before consumption.

  • Thai Milk Tea Spread

    Soak Thai milk tea sachet into warm milk for 10 mins or until fragrant.

    Soak the gelatin sheet in water until soft.

  • 3

    Soften cream cheese and mix well with icing sugar.

    Remove the tea bag from the milk, reheat the milk, add soften gelatin sheet and mix well until dissolved.

    Add milk mixture into cream cheese mixture in 2-3 batches and mix well

    Add whipping cream to the cream cheese milk mixture to obtain desired consistency.

    Sieve, cool, and use.

  • Assemble

    Slice baked toast into thick slices, about 5-7 cm in height.

    Optional: Spread butter lightly on the surface of the bread, and toast for 2-3 mins or until crispy.

    Spread Thai milk tea spread on the surface of the toast.

    Add Brown Sugar Jelly Ball (BN-06) on top of the toast.

    Add a scoop of ice cream for the best experience. (Optional)
